My husband LOVES this recipe. I like it too, because it's easy, delicious, and Weight Watchers friendly!
Ingredients:
1 prebaked pizza crust
1 can of Rotel (I use original, but you can use mild if you prefer)
2 tsp dried basil
2 tsp dried parsley
1 tsp dried oregano
1 garlic clove minced
1 cup of shredded, light mozzarella cheese
1 can artichoke hearts coarsely chopped
1 small can sliced mushrooms
1/2 small can sliced black olives
2 oz. prosciutto cut into small pieces
Over medium-high heat, cook Rotel, basil, parsley, oregano, and garlic until juice from Rotel has evaporated (about 8 minutes). Spread the mixture on the pizza crust. Top with cheese.
Over medium-high heat, cook artichoke hearts until soft and slightly browned. Add to pizza.
Top pizza with mushrooms, olives, and prosciutto.
Baked according to directions on pizza crust packaging, adding time if necessary so that crust is crisp.
** I topped this pizza with chicken instead of prosciutto, and it was yummy, too!
